Dark Chocolate, Pear & Walnut Cake 
  • 75g melted flora or butter, depending on your tolerance
  • 150g light soft brown sugar 
  • 1 tsp. cinnamon. 
  • 125ml plant-based milk 
  • 1 tbsp. lemon juice 
  • 120g toasted walnuts
  • 175g plain flour 
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda 
  • 75g dark chocolate, chopped 
  • two small ripe-ish pears
for the buttercream
  • 50g flora or butter 
  • 100g icing sugar 
  • a shed-load of vanilla 

1. Right, so preheat your oven to 160c and grease and line a 900g loaf tin.
2. Whisk together the melted flora or whatever you are using, sugar, cinnamon, milk and lemon juice until smooth. Set aside. 
3. In a food processor, whizz 75g of the walnuts until fine, like a flour consistency. Mix this whizzed nut mixture with the flour, baking powder, baking soda, remaining toasted nuts and dark chocolate. 
4. Core and dice the pears into 1cm-ish sized chunks and pop into the liquid ingredients along with the combined dry ingredients. Mix until JUST combined and pour into the prepared tin. Smooth the top and bake for 40 minutes or until a skewer inserted comes out clean. Turn out onto a wire rack to cool complete before icing.  
5. For the buttercream, whisk all of the ingredients for at least 5 minutes until paler in colour and fluffy. Top the cooled cake with the buttercream and additional topped chocolate, nuts, pear slices and the kitchen sink
